When farmer Toni milks cows on his organic farm, cheeses with various additives are made from hay milk, but the real champion among them is the award-winning Prosenik, an organic aged cheese with a rich aroma that matures for at least 12 months. Meanwhile, just a few dozen kilometers and hills away, farmer Gregor feeds his black and white piglets, our indigenous Krško Polje people, who are known for the extremely aromatic taste of meat and bacon. The bacon of all bacons is their organically produced meatless (lardo) bacon, which will simply melt in your mouth. But not only the Krško Polje piglet is indigenous to Dolenjska, the sweet red Raška č'bula from Rake is also indigenous, which we caramelize and make a sauce from it, which forms a delicious whole with cheese and meats ... also with the bear salami from Kočevski Rog. But when we add a glass of semi-dry "Penina od fare" from the Frelih Winery in Šentrupert to all these delicacies, all our senses really come into play. It is produced according to the classic method from hand-picked velvety blackcurrants that grow on the sun-drenched Šentrupert hills, and in it you will detect notes of bread crust and yeast as well as a scent reminiscent of raspberry.
