Extra virgin olive oil from the Slovenian Istria with a protected designation of origin (PDO) is a premium olive oil produced exclusively in the area of Slovenian and Croatian Istria. The oil is produced, processed, and bottled under strict rules set by the certification body, ensuring traceability of the product.
Oil can be produced from domestic and cultivated (local) varieties of olives: Istrian white, Leccino, Buga, Črnica, Maurino, Frantoio, and Pendolino.
The oil is characterized by a pronounced bitterness and spiciness, which originate from at least 30% of the Istrian white variety, which at optimal ripeness is known to contain high levels of biophenols (natural antioxidants).
