Barley
At Kmečki glas Publishing, we have prepared a new book about another grain: barley, following two successful Slovenian-English books: Ajda and Proso. This one is also a parallel Slovenian-English edition.
Barley seeds are rich in fiber, particularly important dietary beta-glucans, proteins, and minerals (iron, zinc, phosphorus, magnesium). Beta-glucans bind a lot of water and other substances, which they excrete from the body, and this is also related to lowering the concentration of bad cholesterol in the blood serum. In addition to introductory knowledge about barley as a grain, the book is primarily culinary. The book contains more than 40 recipes for delicious dishes, so it will certainly contribute to greater use of barley and the development of new, healthy local dishes.
